Ingredients:
½ cup pistachios, ½ cup almond flour, ½ cup sugar, 3 eggs, 2 tbsp butter, 2 tbsp flour
1½ cups raspberries, ¼ cup sugar, 1½ tsp gelatin, 1 tbsp lemon juice, ¾ cup whipped cream
½ cup raspberry jam, 1 tbsp water
Directions:
Bake sponge: Blend pistachios fine, then mix with almond flour, sugar, eggs, butter, and flour. Bake in an 8×8 pan at 350°F for 15–18 min. Cool.
Make mousse: Simmer raspberries, sugar, and lemon juice. Strain, stir in gelatin, then fold into whipped cream.
Assemble: Slice cake, spread mousse between layers, and chill 1 hour.
Glaze: Warm jam with water; pour over cake for a glossy finish. Chill until set.
Top with pistachios or white chocolate for a glittering finish — a slice that tastes as bright as it looks.
